This vegetable will have a long stem with small and flat leaves. Roots maybe attached. The mature greens have a stronger and more mustard-like taste.

Very perishable, use within one to two days. For short term storage place in plastic bag in refrigerator.

How to Prepare
Wash these small leaves by trimming roots and swirling leaves in a bowl of cool water. Repeat until dirt is removed. Best to use these fragile leaves raw in salads.

Garnishes or salads prepared with a garlic or mustard-based dressing.
