Harvested
Available most of the year, beginning mid to late June, with most of their growth eached by the first frost. Nutritional value will remain for up to three months after picking.
Selection Tips
Fresh beets have a globular shape and a deep-red color. The flesh is firm and smooth with a good showing of leaves.
Best Way to Store
Use as fresh as possible. Store in refrigerator in damp cloth or plastic bag, with leaves and stems cut off 1-2 inches above root crown to keep firmness.
How to Prepare
Scrub to remove dirt. Retain skin for trace mineral content. Grate, cube, and slice. Serve raw, steamed, sauteed, or baked.
