Selection Tips
When buying, look for green color in the heads, leaves and stems. Stalks will be tender and firm with dark green or purplish-green buds in the head.
Best Way to Store
Eat as fresh as possible. Place in plastic bag in refrigerator for short term storage. For longer periods, freeze broccoli after slicing stems that hold the florets and blanching before placing in airless container.
How to Prepare
Raw or steamed is best. Rapid cooking with very little water retains the nutrients. Stems are to be cooked a short time before adding the blossoms.
