Refrigerate in plastic bag for several days. For long term storage, pack root in moist sand and keep in cool place.

How to Prepare
Wash to remove dirt. Do not peel to retain nutrients. Shredded, thinly sliced, stir-fried, steamed, or cooked.

Salads, chips, guacamole, soup, stews, broths.
