Selection Tips
Choose celeriac's smaller in appearance, with a light brown bulb-type root, since they will be less woody and more tender.
Best Way to Store
Store fresh, or dry as a seasoning. To refrigerate, for up to one month, place in plastic bag without washing the root. Storage in root cellar can extend its life from 6 to 8 months.
How to Prepare
Cut stalks at the root base. To remove dirt, soak the root and scrub with a vegetable brush. Peel if skin is too tough. Serve raw, parboiled, baked, boiled or mashed.
