Selection Tips
The light green, glossy leaf stems are brittle so they will snap easily. They are of moderate thickness and length, and are smooth on the inside.
Best Way to Store
For short term storage, cut the leaves off and refrigerate stems upright in an inch of water. For longer periods, as one month, celery will keep in a cool root cellar. Leaves can also be dried and used as spices.
How to Prepare
Wash stems, cut off greens, serve as sticks or dice for salads and soups.
