Harvested
Available from midsummer until cool weather begins, with heaviest harvest from May through August. Successive plantings in late spring through early summer will bring an abundant, continuous crop.

Selection Tips
Choose vegetable with a good green color and one that is firm and fresh.

Best Way to Store
Refrigerate to retain moisture. Will keep fresh appearance for a week. If cut or peeled will deteriorate quickly.

How to Prepare
Use unpeeled and dice or slice for salads or sandwiches. Also used pureed, grated or blended with spices.
