A fresh green appearance with large, tender leaves, free of dirt, damage or wilting.

Best Way to Store
Use fresh. For short term storage, refrigerate for three to five days unwashed, wrapped in a damp towel and placed in a plastic bag.

How to Prepare
Wash leaves and stems to remove dirt by swirling in cool water. Use raw in salads or cook quickly to preserve color, and nutrients. If cooked blanch, braise, saute, simmer, or steam.

Recipes Best Suited for
The leaves are good in salads, and the root excellent in soups, stews, and broths.
