Harvested
The large, unopened flower bud of the artichoke thrives in cool weather and is available until the frost. The most abundant crops are in April and May.
Selection Tips
Artichokes have plump, fleshy leaves which are large, a good green color, and cling tightly to each other.
Best Way to Store
Refrigerate for up to two weeks in a plastic bag and soak in ice water to restore plumpness. For longer periods, store in damp sand in a cold, but not freezing environment.

Raw or cooked, peeled or unpeeled. If cooked, sautee, stir-fry, steam or simmer.
