Harvested
Available mid-June through late fall and possibly into the winter months. Their proper size is reached in the fall, so this is the best time to harvest them.
Selection Tips
Broad, flat green leaves sprouting from a white base or stem. The aroma is pleasant.
Best Way to Store
For short storage, trim damaged tops and roots and refrigerate in plastic bag. For longer periods of from one to two months, bury them in moist soil and keep in a cool, but not freezing climate.
How to Prepare
Wash way down into the base of leaves to remove dirt. Trim tops to approximately an inch above the stem. Peel outside layer. Leeks can be prepared raw or cooked. Try steaming, boiling, sauteing, or pureeing.
