Good source of vitamin A and C, plus the minerals iron and calcium. Some varities of lettuce are high in iron, such as Boston and Bibb. The darker green leaves are the most nutritious.

Selection Tips
Choose heads that give slightly when squeezed, are free from bruising, and have a fresh and crisp appearance. Lighter heads have a sweeter taste and the leaves are easier to separate.

Best Way to Store
Store in refrigerator in tightly closed plastic bag or lettuce crisper.

How to Prepare
Twist out the core, rinse by allowing cool water to run through head to refresh it, drain completely with core end down. Serve raw or steamed.
