Harvested
Height of the season is August through October, with different varieties peaking at different times. Bartlett: July through December, Anjou and Bosc: October through May, Comice: October through December, Packham: March through July.
Selection Tips
Well-colored, unblemished, and quite hard due to unripened state. Additional ripening will bring softening and enhanced flavor.
Best Way to Store
Ripening can occur either at room temperature or in the refrigerator. Remove from refrigerator several days before eating.
How to Prepare
Wash and slice, unpeeled, to retain vitamin C content. Coat slices with lemon juice to keep from darkening in color. Juice, bake, poach or saute.

Raw, salads, juices, hot cereals, yogurts, stuffings, sauces, butters.
