High water content, modest in vitamin C, some B's, and iron. Nutrient values vary depending on variety of seed. Varities are: adzuki bean, alfalfa, clover, daikon radish, mung bean, soybean and sunflower.

Available year round, since they grow indoors.

Selection Tips
They are moist, crisp, and smell clean. The younger and more tender sprouts are shorter.

Best Way to Store
Use fresh. Refrigerate unwashed from 3 to 5 days in a plastic bag.

How to Prepare
If wilted, revive by soaking in ice water for a few minutes and drying with a paper towel before using.

Recipes Best Suited for
Salads, sandwiches, pitas, stir-frys. Sprinkle over soups, stews, casseroles.
