The soft-shell is fresh, fairly heavy for its size and a characteristic color. The shell is tender and the seeds soft.

Refrigerate in plastic bag for up to one week. For longer storage, freeze cooked squash in airtight container.

Wash to remove dirt and do not peel. Grate or slice raw for salads or dips. If cooked steam, bake, grill, blanch, or mash.
