Sweet Corn
Nutritionally Rich In These Nutrients
All corn are good sources of vitamin C, while the yellow kernel variety contains small amounts of vitamin A.
Harvested
A summer vegetable available in late summer and early fall.
Selection Tips
The husks are fresh looking, tight and green, with kernels plump and tightly packed together. The kernels near the tip are smaller, yet plump. The juice of the kernel is milky and the silk moist, soft, and light golden.
Best Way to Store
Use fresh or store unhusked in refrigerator for a day or two. To prevent sugar from turning to starch, corn maybe barpoiled and kept slightly longer. If husked, refrigerate in perforated plastic bag.
How to Prepare
Remove husk, snap off ends and remove silk strands from kernels. Kernels maybe eaten on or off the cob. Corn maybe boiled, grilled, roasted or steamed.
